The art of artichokes
Globe artichokes are often sold in bunches. The two most common varieties available in the south are the small purple ones from Provence (Violet de Provence) and the large green ones from Brittany (Camus de Bretagne). Once planted in your garden they will stay forever, but you need to have a lot of room for them to grow. If you want to keep a bunch fresh for two or three days place them somewhere cool, in water.

Artichauts farcis**

• Choose 1 or 2 artichokes per person according to their size. Violet ones are good for this recipe.
• Cut off the stalks and remove the outer leaves until you reach the softer ones.
• Dig out the centre so that there is space for the stuffing.
• Normally, violet artichokes have no fur in the middle. If there is, you need to remove it.
• Squeeze lemon liberally over them to avoid discolouration.

For the stuffing
• 400 sausage meat
• 1 egg
• 1 slice of Parma ham cut into small pieces
• 2 slices of stale bread soaked in milk
• Chopped garlic and parsley
Mix the ingredients well and fill the artichokes with the stuffing

Preparation
• Put two spoons of cooking oil and a handful of bacon cubes into the bottom of a heavy pan such as a pressure cooker.
• Brown the stuffed artichokes all over until golden.
• Add a glass of water, salt and pepper and simmer for 30-40 mins.
• Add a little water if needed during the simmering.
• Serve with boiled potatoes.
