the new castellas 1After years of living up to its excellent reputation, and following the departure of chef Jérôme Nutile and his two Michelin stars, Le Castellas - one of the Uzège area’s landmark gastronomic restaurants - re-launched back in February, reinventing itself in the process: new chef, new manager, new strategy. A few months later, I was curious to try it out. I arrived full of anticipation, and left filled with emotion.
