Ingredients (serves 4)

  • 2 ripe peeled avocados
  • 300 ml vegetable broth
  • 220 ml whole milk
  • 2 tbsp lime juice
  • 3/4 tsp salt
  • 1/4 tsp black pepper

 

Preparation

  • Cut the avocados in half, and remove the stones
  • Spoon avocado into a blender, add the remaining ingredients, and purée until creamy.
  • Chill the soup for up to 2 hours before serving, or serve immediately.
  • Consume within 2 days
