Apple flower

Ingredients (makes 4)

  • 2 apples
  • 1/2 lemon
  • 1 egg yolk
  • 6 tbsp apricot jam
  • rectangle puff pastry
  • castered sugar


  • Preheat oven to 190C. Remove the core from the apples and slice them. Place them in the bowl of lemon water 2 to 3 min in the microwave until you can bend them.
  • Cut the puff pastry into 4 long pieces 6 cm in height. Spread with the jam. (Apricot or other)

  • Line up the apple slices half up the piece of pastry so that they slightly overlap each other. Fold over the pastry so that the bottom half of the apples slices are covered and add another layer of apples and jam on top.

  • Carefully roll up each strip to form a flower, and place in muffin cup. Brush up a egg yolk on top.

  • Bake for 30-40 minutes until the pastry in the centre is cooked. Sprinkle with castered sugar before serving.
